After you make this recipe, you'll never again want to eat those nasty store bought imposters again.
I adapted this recipe from The Hippie Homemaker.
- 3 Tbsp. gelatin (in stores or online if you want grass fed)
- 1 cup filtered water, split in half (Alternately you can use hydrosol or tea here to add a specific herbal flavor, such as green tea or peppermint tea)
- 1 cup honey
- 1/4 tsp. salt
- 1 tsp. vanilla extract (you can add peppermint flavoring if desired)
- Line an 8x8" pan with greased parchment paper. This is very important in being able to get the finished marshmallows out of the pan.
- In your mixing bowl pour in 1/2 cup water and whisk in the gelatin. If you have a counter top mixer, just let it go until well mixed.
- In a medium saucepan combine the other 1/2 cup water, honey and salt.
- Heat over medium to medium high heat, bringing to a boil. Now, this is important.......let the mixture come to a boil and keep stirring. Set a timer and let it boil for 8 minutes. It needs to be pretty darn hot.
- After 8 minutes of boiling, slowly pour the honey mixture into the gelatin mixture, while slowly turning up the speed on your mixer to high.
- Allow mixture to whip on high for 5-10 minutes (this is where it’s nice to have a stand mixer) until a thick marshmallow whipped cream is produced.
- Transfer the marshmallow whip to your prepared pan and smooth down with the back of your spoon. It will try and stick to your spoon. You can also use another sheet of greased parchment paper on top of the fluff and then press down to get the mixture all through the pan.
- Leave your marshmallows out to set either on your counter or in the fridge for an hour or two or until it is firm.
- Pull the marshmallows out of the pan with the parchment paper. Using a knife, cut marshmallows in long strips, and then into squares from there. They will be a little sticky.
- Store marshmallows up to a week in your fridge, although they never last that long in my house. If you intend on toasting them in over a fire, leave them on your counter top. They will remain more moist in the fridge and dryer on your counter.
