As requested by many, the recipe for clean graham crackers!
This recipe was adapted from the 'Big Life, Little Garden' blog.
1/4 c. Organic Butter melted (I use Kerry Gold.....God bless the Irish)
1 Organic Egg, beaten
6 Tbsp Raw Honey (or more. Just add or subtract to your own tastes)
2 Tbsp Water
3/4 tsp Sea Salt
1/2 tsp Baking Soda
2 1/4 c. Organic sprouted whole wheat flour (anything else is really just crap!)
Melt your butter and mix it with the beaten egg and honey. Is a separate bowl, add all your dry ingredients and then pour together with the butter mixture. Mix it up and add the water. Keep mixing until you have your dough. Let the dough sit in the fridge 20 - 30 to firm up a bit.
Now.....the best way to roll the dough out is on parchment paper with the dough between 2 pieces because goodness knows all dough sticks to rolling pins. (Don't have a rolling pin? Just mash it down with your hands!!) When you have your dough ball between the 2 papers (work with only half the dough at a time or things will be too thick) start rolling it out. It doesn't have to be perfect.
Use a butter knife to draw lines into the dough so you can easily snap the crackers apart after they are cooled. Also, use a fork to poke little holes in the crackers before you bake them if you want that cool, authentic look!
Bake for 10 - 15 minutes at 350 degrees. Don't let them get too brown! (oh....the parchment paper can go right into the oven, just fine, but do use a cookie sheet as a base.)
They will be soft at first after cooking and will harden just a little as they cool. Use a spatula to gently separate from the parchment paper.
Enjoy with peanut butter, jam, butter or just by themselves!
