Coconut Whipped Cream

Full fat canned coconut milk
Tsp Honey
1/8 tsp salt

Store your canned coconut milk in the fridge for a few hours to get it good and cold.  When you open it, pull the firm part of the milk out and place in your bowl.  The more watery parts of the milk can be stored in the fridge and used for other recipe ventures!  Add your honey and salt and use a handheld mixer to give it a good 'whipping'.  It may take a bit but it will poof up......just not as much as cows milk cream does.  But.....It's delicious and goes great with absolutely any dessert.  We even eat it around here all by itself!!
