Clean Pumpkin Pie
This recipe was a winner the first time we made it. The girls loved it. It's very mild and not incredible sweet which is how I like it. But you can always tweak it based on your own preference.
I found this incredible recipe on Elanaspantry.com and only changed a tad.
1 can organic pumpkin puree
2 eggs
1/2 cup canned full fat coconut milk
1/2 cup honey
1 tbsp Cinnamon
1tsp nutmeg
1/4 tsp cloves
1/8 tsp sea salt
Unbaked Paleo Pie Crust (Click here for that recipe!)
So easy. Mix it all together, spoon into the pie crust and bake at 350 for 45-50 minutes. Make sure to let it sit in the fridge a couple hours before you eat it so the pie can firm up. Super yummy.
