Boil chicken breasts and then cube OR marinade them in organic olive oil and balsamic and then bake at 350 for about 20 minutes.....then cube. Throw in a little organic mayo (read your labels), chopped carrots, chopped red peppers, chopped apples (or strawberries), pine nuts and a little salt and pepper. Mix it up and your done. Steam asparagus for about 7 minutes and it's meal time. Simple. My kids loved it.
