Irish Crock Pot Roast

Beef.  It's not just for St. Patricks Day.


1 pound of pot roast (grass fed and organic)
1 pound (to your own liking) of little red potatos
1 bag of baby carrots
2 onions
2 cups organic beef broth
Salt and Pepper
Olive oil

Preheat a little olive oil in a pan then add your salt and pepper seasoned beef.  Cook about 4 minutes on each side until nice and brown.  Add beef broth, onions and pot roast into your crock pot, cover and cook on low for 5 hours.  Add potatos and carrots, cover and cook for another 3 hours.  Make sure your carrots are covered by broth so they cook.

That's it!!  And this roast is freaking awesome.  And easy, I might add.
