Chia Ice 'Cream'


My kids ask me to make this practically every night.  You can't go wrong with it.  It's the best and it's so good for you!

Ingredients:
1 tablespoon chia seeds
1 cup rice milk (or almond, coconut, hemp.....you choose)
Half cup ice (but go by the thickness you desire)
Quarter tsp cinnamon
Dash of stevia to taste (or agave or sugar.....whatever you prefer.  Just go organic.)

Pour your milk into a blender (we use the mac daddy Vita Mixer) and add chia seeds.  Seeds will need to soak for about 15 minutes.  After soaking add your other ingredients and blend on high.  You will probably need to stir a bit while blending as the ice makes things very thick and you don't want to blow out your motor.  Add milk to your thickness liking and add stevia to your sweetness liking.  Pour in bowls and chow down.  It's heaven.  We make variations by adding bananas, pumpkin, berries.....whatever.  We've even made it with peanut butter!
