Dark Chocolate Schweddy Balls

I have a ton of folks addicted to these.  Delish.  BUT....they are have a very bold, dark taste.  So, if you love milk chololate....these are probably not going to be your fave.


1/2 cup almond meal
1/2 cup flax seed meal
1/2 cup coconut oil or coconut butter, melted.
1/2 cup honey (or agave) - use more or less to your own taste.
4 chopped dates
1 tsp vanilla
Shredded coconut for rolling

Melt your honey (or agave), vanilla and coconut oil together on low heat while stirring frequently.  While this is melting, mix together all dry ingredients then add all wet and dry together.  It will be very dry at first but keep mixing.  If the mixture continues to be too dry, add more honey or agave.  If it's too wet, add in more almond meal.  
When the desired consistency is reached, start rolling them into little balls and then roll each one in organic, shredded coconut and place on a pan.  After all balls are rolled, place your pan in the fridge.  After about 20 minutes, you'll be able to enjoy some serious dark chocolate goodness!
Don't forget to put your shweddy balls back in the fridge.  They need to stay cold.
